- Combine cherries, sugar, and water in a small saucepan. Simmer over medium heat for 8 minutes, mashing the cherries, until thickened. Stir in lemon juice and set aside.
- In a mug, whisk hot espresso with cocoa powder and maple syrup until smooth and glossy.
- Heat milk until steaming, then froth until foamy. Strain the cherry syrup into the mocha base.
- Pour the frothed milk over the latte, spoon the foam on top, and garnish with a small spoonful of the reserved cherry solids.
Notes
The cherry syrup recipe makes enough for about 3 lattes. Store extra syrup and solids in the fridge for up to a week and warm gently before using again.
