French Toast Cups Recipe

Ingredients
  

  • 4 cups cubed bread (1-inch pieces, about 6 slices brioche or challah)
  • 4 large eggs
  • 1 cup whole milk
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • ½ tsp ground cinnamon
  • pinch of salt
  • butter or nonstick spray for greasing

Method
 

  1. Preheat oven to 375°F. Whisk eggs, milk, maple syrup, vanilla, cinnamon, and salt until smooth.
  2. Toss bread cubes in custard and let soak for 10 minutes, stirring once.
  3. Grease a 12-cup muffin tin and divide soaked bread evenly among cups, pressing down gently.
  4. Bake 20 to 25 minutes until tops are deep golden brown and a toothpick comes out clean.
  5. Cool in pan 5 minutes, run a knife around edges, lift out, and serve warm with maple syrup and berries.

Notes

Stale bread works best here; fresh bread can turn a bit gummy if soaked too long. The cups puff up in the oven and settle as they cool, so do not worry if they look tall when you pull them out.
