French Toast Casserole Recipe

Ingredients
  

  • 1 lb challah (or brioche), cut into 1-inch cubes
  • 8 large eggs
  • 2 cups whole milk
  • 1 cup heavy cream
  • ½ cup packed light brown sugar
  • 2 tsp vanilla extract
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp kosher salt
  • ½ cup unsalted butter, melted
  • 1 cup chopped pecans
  • ½ cup packed light brown sugar (for topping)
  • Pinch of kosher salt
  • Powdered sugar and maple syrup, for serving

Method
 

  1. Grease a 9x13-inch baking dish and spread the bread cubes evenly inside.
  2. In a large bowl, whisk the eggs until smooth. Add the milk, cream, ½ cup brown sugar, vanilla, cinnamon, nutmeg, and ¼ tsp salt; whisk until combined. Pour over the bread, pressing gently to submerge. Cover and refrigerate at least 4 hours or overnight.
  3. When ready to bake, preheat the oven to 350°F (175°C). In a small bowl, mix the pecans, ½ cup brown sugar, melted butter, and a pinch of salt until crumbly. Sprinkle over the soaked casserole.
  4. Bake for 45 to 55 minutes, until puffed, golden, and set in the center. Let cool 5 minutes, dust with powdered sugar, and serve with maple syrup.

Notes

If your bread is fresh, dry it in a 300°F oven for 10 minutes before assembling. The casserole will puff up dramatically in the oven and settle as it cools, that’s completely normal.
