Ingredients
  

  • 6 thick slices day-old brioche (about 8 oz)
  • 2 large eggs
  • ¼ cup whole milk
  • 1 tsp vanilla extract
  • ½ tsp ground cinnamon
  • Pinch of kosher salt
  • 2 tbsp unsalted butter, divided
  • Warm maple syrup and powdered sugar, for serving

Method
 

  1. Cut the bread slices into 1-inch cubes (leave crusts on or off, as you prefer). If the bread is very fresh, dry the cubes in a 300°F oven for 5 minutes and cool.
  2. In a wide shallow bowl, whisk the eggs, milk, vanilla, cinnamon, and salt until smooth.
  3. Melt 1 tablespoon butter in a large nonstick or cast iron skillet over medium heat. Toss half the bread cubes in the custard just to coat, let the excess drip off, and add them to the pan in a single layer. Cook for about 4 minutes, turning every minute, until golden on all sides. Wipe the pan, add the remaining butter, and repeat with the second batch.
  4. Transfer hot bites to plates, dust with powdered sugar, and serve immediately with warm maple syrup.

Notes

Day-old bread really does make a difference here—it absorbs the custard without getting mushy. If you only have fresh bread, dry the cubes briefly in the oven as noted in step 1. Work in batches so the pan stays hot and the bites crisp instead of steaming.
