French Quiche Lorraine Recipe

Ingredients
  

  • 1 unbaked 9-inch pie crust, homemade or store-bought
  • 6 slices thick-cut bacon
  • 1 small yellow onion, diced
  • 1 cup (4 oz) shredded Gruyère cheese
  • 4 large eggs
  • 1 1/2 cups heavy cream
  • 1/2 tsp fine sea salt
  • 1/4 tsp freshly ground black pepper
  • 1/8 tsp ground nutmeg

Method
 

  1. Preheat oven to 375°F (190°C). Blind bake the crust with pie weights for 15 minutes, remove weights, then bake 5 more minutes until lightly golden.
  2. Cook bacon in a skillet until crisp, about 6 to 8 minutes. Transfer to a plate. Cook onion in the bacon fat until soft, 3 to 4 minutes.
  3. Whisk eggs, cream, salt, pepper, and nutmeg until smooth.
  4. Scatter bacon, onion, and cheese in the crust. Pour custard over the fillings.
  5. Bake 35 to 40 minutes, until edges are set and center jiggles slightly. Cool on a wire rack for 10 minutes, then slice and serve.

Notes

Let the quiche cool at least 10 minutes before slicing so it finishes setting. If you use a store-bought crust, look for one made with all-butter for the best texture. The total time does not include cooling, but that rest is essential for clean slices.
