- Preheat oven to 375°F (190°C). Blind bake the crust with pie weights for 15 minutes, remove weights, then bake 5 more minutes until lightly golden.
- Cook bacon in a skillet until crisp, about 6 to 8 minutes. Transfer to a plate. Cook onion in the bacon fat until soft, 3 to 4 minutes.
- Whisk eggs, cream, salt, pepper, and nutmeg until smooth.
- Scatter bacon, onion, and cheese in the crust. Pour custard over the fillings.
- Bake 35 to 40 minutes, until edges are set and center jiggles slightly. Cool on a wire rack for 10 minutes, then slice and serve.
Notes
Let the quiche cool at least 10 minutes before slicing so it finishes setting. If you use a store-bought crust, look for one made with all-butter for the best texture. The total time does not include cooling, but that rest is essential for clean slices.
