- In a large ovenproof skillet over medium-high heat, brown the ground beef until no pink remains, about 6 to 8 minutes. Season with salt and pepper. Drain all but 1 tablespoon of fat, then transfer the beef to a plate.
- Reduce the heat to medium and melt the butter. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, until deeply golden and reduced, about 10 to 12 minutes.
- Return the beef to the pan. Stir in the rice, beef broth, Worcestershire sauce, and thyme. Bring to a boil, then cover and reduce the heat to low.
- Simmer, covered, for 15 to 18 minutes, until the rice is tender and the liquid is mostly absorbed.
- Heat the broiler to high with a rack in the top position. Fluff the rice mixture, top with the shredded cheese, and broil for 2 to 3 minutes, until the cheese is bubbly and golden in spots. Let rest 2 minutes before serving.
Notes
If your skillet is not oven-safe, transfer the rice mixture to a broiler-safe baking dish, top with cheese, and broil as directed. The cheese on top will stay stretchy and hot for a few minutes, but the dish is at its best right out of the oven. A handful of fresh parsley scattered on top right before serving adds a nice fresh pop of color.
