- Melt butter in a large deep skillet over medium heat. Add onions and a pinch of salt; cook, stirring occasionally, until deeply golden and jammy, 15 to 20 minutes.
- Push onions to the edges, add ground beef, and cook until no longer pink, about 5 minutes. Stir in garlic for 1 minute, then sprinkle flour over the mixture and cook 1 minute more.
- Pour in broth, Worcestershire, thyme, salt, and pepper. Bring to a boil, add noodles, reduce heat to medium-low, cover, and cook 8 to 10 minutes until tender, stirring once.
- Remove from heat, stir in cold sour cream until smooth, taste and adjust seasoning. Top with cheese if using and serve right away.
Notes
The Gruyère topping is optional but adds that classic French onion feel. For an extra-crispy cheese top, transfer the finished dish to an oven-safe skillet, sprinkle with cheese, and broil for 2 minutes before serving.
