- In a small bowl, whisk together the olive oil, lemon juice, garlic, oregano, salt, and pepper.
- Place the chicken in a gallon-sized zip-top freezer bag, pour in the marinade, seal, and gently massage the bag to coat every piece. Press out air, flatten, label, and freeze.
- When ready to cook, thaw the chicken completely. Heat the vegetable oil in a skillet over medium-high heat, sear the chicken for 6-7 minutes per side until cooked through (165°F), then rest, slice, and serve.
Notes
Freezing time is not included in the recipe time; plan to thaw overnight in the fridge or use a cold water bath if you're in a hurry. The chicken can stay frozen with the marinade for up to 3 months.
