Freezer Chicken Marinade Recipe

Ingredients
  

  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 1/4 cup olive oil
  • 3 tbsp fresh lemon juice
  • 3 cloves garlic, minced
  • 2 tsp dried oregano
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 2 tsp vegetable oil

Method
 

  1. In a small bowl, whisk together the olive oil, lemon juice, garlic, oregano, salt, and pepper.
  2. Place the chicken in a gallon-sized zip-top freezer bag, pour in the marinade, seal, and gently massage the bag to coat every piece. Press out air, flatten, label, and freeze.
  3. When ready to cook, thaw the chicken completely. Heat the vegetable oil in a skillet over medium-high heat, sear the chicken for 6-7 minutes per side until cooked through (165°F), then rest, slice, and serve.

Notes

Freezing time is not included in the recipe time; plan to thaw overnight in the fridge or use a cold water bath if you're in a hurry. The chicken can stay frozen with the marinade for up to 3 months.
