Ingredients
  

  • 1 ½ cups (190 g) all-purpose flour
  • ¾ cup (150 g) granulated sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp fine salt
  • 1 cup (240 ml) unsweetened non-dairy milk
  • ⅓ cup (80 ml) neutral oil
  • 2 tsp vanilla extract
  • 1 tsp apple cider vinegar
  • ½ cup (112 g) vegan butter, stick form, softened
  • 2 ½ cups (300 g) powdered sugar
  • 1 tsp vanilla extract
  • 2 to 3 tbsp unsweetened non-dairy milk

Method
 

  1. Preheat oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  2. In a separate bowl, whisk non-dairy milk, oil, vanilla, and vinegar until smooth, about 30 seconds. Let it sit a minute.
  3. Pour wet ingredients into the dry and stir just until no large flour pockets remain. Divide batter among liners, filling ⅔ full, and bake 18 to 22 minutes until a toothpick comes out clean. Cool in pan 5 minutes, then transfer to a rack to cool completely.
  4. For the frosting, beat vegan butter until creamy, about 2 minutes. Slowly add powdered sugar, then vanilla and 2 tbsp milk. Beat on medium-high for 3 to 4 minutes until fluffy, adding more milk if too stiff.
  5. Once cupcakes are completely cool, frost with a piping bag or knife and serve.

Notes

Make sure the cupcakes are fully cooled before frosting. Unfrosted cupcakes freeze well for up to 2 months. The frosting is easiest to pipe when it has been at room temperature for about 10 minutes.
