- In a bowl, mash the banana, then stir in sugar, vanilla (if using), plant milk, and oil.
- In another bowl, whisk the flour, baking powder, and salt.
- Pour the wet mixture into the dry and stir just until no dry streaks remain.
- Heat a greased nonstick skillet over medium heat. Spoon 1/4 cup batter per pancake, cook 2 to 3 minutes per side.
- Stack pancakes, drizzle with maple syrup, and top with banana slices or pecans. Serve warm.
Notes
For the fluffiest texture, use a very ripe banana and don’t overmix. The batter can rest while the pan heats. Pancakes freeze well.
