- Whisk the flour, sugar, baking powder, baking soda, and salt in a large bowl.
- In a separate bowl, beat the egg, then whisk in the milk, melted butter, and sourdough discard until smooth.
- Pour the wet ingredients into the dry and fold together until just combined. Let the batter rest for 5 minutes.
- Heat a griddle over medium heat and butter it lightly. Drop 1/4 cup batter per pancake and cook until bubbles form on the surface, 2 to 3 minutes. Flip and cook until golden, 1 to 2 minutes more. Stack and serve warm.
Notes
The batter thickens as it rests. If it gets too thick to pour easily, stir in a splash of milk. These pancakes are best eaten right away but reheat beautifully.
