Ingredients
Method
- Line a tray with parchment, scoop 8 tablespoon-sized discs of Nutella, and freeze until solid (at least 30 minutes).
- Whisk flour, sugar, baking powder, baking soda, and salt. In another bowl, whisk buttermilk, egg, melted butter, and vanilla. Combine wet and dry until just mixed; batter will be lumpy.
- Heat a buttered nonstick skillet over medium. Pour 2 tablespoons batter, place a frozen Nutella disc in the center, and cover with 1 tablespoon batter. Cook 2 to 3 minutes per side until golden.
- Stack pancakes, drizzle with maple syrup, and serve warm.
Notes
If the Nutella discs soften while you’re cooking, return them to the freezer for a few minutes. Leftover pancakes keep well in the fridge for up to 3 days; reheat in a toaster or oven to re-melt the center.
