- Whisk together flour blend, sugar, baking powder, and salt in a large bowl.
- In a separate bowl, whisk milk, egg, melted butter, and vanilla until smooth.
- Pour wet ingredients into dry. Stir gently until just combined, a few lumps are okay. Let batter rest for 5 minutes.
- Heat a nonstick skillet over medium heat and lightly butter it. For each pancake, pour ¼ cup batter. Cook 2-3 minutes per side, flipping when bubbles appear and edges look set.
- Stack pancakes onto a warm plate, top with butter and maple syrup, and serve immediately.
Notes
Letting the batter rest for 5 minutes really helps the flour hydrate and yields fluffier pancakes. These freeze beautifully, so consider doubling the batch for busy mornings.
