- Cook bacon in a skillet over medium heat until crisp; set aside. Sauté onion in the same pan until soft, then add spinach until wilted. Preheat oven to 375°F (190°C) and grease a 9-inch pie dish.
- Whisk eggs, cottage cheese, milk, flour, salt, pepper, and nutmeg until smooth.
- Fold in Gruyère, cooked bacon, and the onion-spinach mixture. Pour into the prepared dish.
- Bake for 35–40 minutes, until the top is golden and the center wobbles just slightly when shaken.
- Let the quiche rest 10 minutes, then slice and serve warm with fresh herbs if you like.
Notes
Resting the quiche before slicing lets it finish setting and makes for cleaner cuts. The center will continue to firm up as it cools, so do not worry if it still looks a little soft when you pull it from the oven.
