- Set oven to 375°F. Cook bacon in a skillet over medium heat until crisp, about 8 to 10 minutes, then crumble.
- Whisk eggs, heavy cream, salt, pepper, and nutmeg in a bowl until smooth.
- Grease a 9-inch pie dish. Evenly scatter bacon, cheese, and green onions in the dish, then pour the egg mixture over the top.
- Bake for 30 to 35 minutes, until the edges are golden and the center barely jiggles.
- Let the quiche rest for 5 minutes, then slice and serve warm.
Notes
Letting the quiche rest is key; it finishes setting during those few minutes and slices cleanly. For a deeply browned top, you can run it under the broiler for 1 minute at the very end, watching closely.
