Fluffy Coconut Layer Cake with Toasted Coconut Frosting Recipe

Ingredients
  

  • 2 1/2 cups all-purpose flour
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, softened
  • 1 3/4 cups granulated sugar
  • 4 large eggs, room temperature
  • 2 tsp vanilla extract
  • 1 tsp coconut extract
  • 1 cup full-fat canned coconut milk, well shaken
  • 1 cup sweetened shredded coconut
  • 8 oz cream cheese, cold
  • 1/2 cup unsalted butter, softened
  • 3 1/2 cups powdered sugar
  • 1 tsp vanilla extract (for frosting)
  • 1/4 tsp coconut extract (for frosting)
  • 2 cups sweetened shredded coconut (for coating)

Method
 

  1. Preheat oven to 350°F (175°C). Grease three 8-inch cake pans, line with parchment, and grease parchment. Cream 3/4 cup butter and sugar for 4 minutes until light and fluffy.
  2. Beat in eggs one at a time, then vanilla and coconut extract. Whisk flour, baking powder, and salt. Add dry ingredients in three additions alternating with coconut milk in two, mixing just until smooth. Fold in 1 cup shredded coconut.
  3. Divide batter among pans. Bake 22 to 25 minutes until golden and a toothpick comes out with moist crumbs. Cool 10 minutes in pans, then turn out and cool completely.
  4. Beat cold cream cheese and 1/2 cup butter until smooth. Gradually add powdered sugar, then vanilla and coconut extract, whipping until creamy.
  5. Place one layer on a plate, spread 3/4 cup frosting. Repeat with second and third layers. Apply a thin crumb coat and chill 20 minutes. Frost top and sides with remaining frosting. Toast 2 cups shredded coconut in a dry skillet for about 4 minutes until golden, stirring often. Press onto the sides of the cake and serve.

Notes

Chill the assembled cake for 30 minutes before slicing for the cleanest cuts. The flavors deepen after a day in the fridge, so this cake is a great make-ahead dessert.
