Method
- Preheat oven to 350°F (175°C). Grease two 8-inch round pans and line with parchment.
- Whisk flour, cocoa, sugar, baking soda, baking powder, and salt in a large bowl.
- In a second bowl, whisk buttermilk, oil, eggs, and vanilla until smooth.
- Add wet mixture to dry in three parts, stirring gently after each. Stir in hot coffee until batter is thin and glossy.
- Divide between pans and bake 25-28 minutes, until the top springs back.
- Cool in pans 10 minutes, then turn out to cool completely before frosting and slicing.
Notes
For an extra-deep chocolate flavor, swap ¼ cup of the coffee for strong cold brew concentrate. The batter will be very thin, so pour carefully to avoid splashing.
