- Preheat oven to 325°F (160°C) and line a 9x5-inch loaf pan with parchment. Beat egg whites and salt to stiff peaks, about 4 minutes.
- Process cottage cheese, egg yolks, honey, and vanilla until smooth. Add oat flour and baking powder; pulse just until combined.
- Fold the whipped whites into the cottage cheese mixture in three batches, then gently fold in the blueberries.
- Pour into the prepared pan, smooth the top, and bake 30 to 35 minutes until golden and a toothpick comes out clean.
- Cool in the pan 10 minutes, lift out, cool completely on a rack, then slice and serve.
Notes
If the loaf browns too quickly, tent it with foil after 20 minutes. The bread tastes best the day it’s made but keeps well in the fridge. Letting it cool fully before slicing prevents the crumb from compressing.
