- Mash the banana in a medium bowl until smooth with a few small lumps.
- Add the egg, milk, and melted butter, then whisk until combined.
- Add the flour, sugar, baking powder, and salt, and fold gently until no dry streaks remain. Let the batter rest 5 minutes.
- Cook 1/4 cup scoops of batter in a buttered nonstick skillet over medium heat for 2 to 3 minutes per side, until golden.
- Stack the pancakes, drizzle with maple syrup, and serve right away.
Notes
These pancakes are best fresh off the griddle. Keep cooked pancakes warm in a low oven while you finish the batch, and never press them with the spatula after flipping or you will deflate them.
