Fluffy Bacon Cheddar Quiche Recipe

Ingredients
  

  • 1 single 9-inch pie crust, homemade or store-bought
  • 4 slices thick-cut bacon
  • 2 tbsp unsalted butter
  • 1 large yellow onion
  • 4 large eggs
  • 1 cup heavy cream
  • ½ cup whole milk
  • 1 cup shredded sharp cheddar cheese
  • ¼ tsp salt
  • ⅛ tsp ground black pepper
  • ¼ tsp ground nutmeg

Method
 

  1. Heat oven to 375 °F. Roll crust into a 9-inch pie dish, prick, line with parchment and weights, and blind-bake 15 minutes. Remove weights and bake 5 minutes more.
  2. Cook bacon in a skillet over medium heat until crisp, remove, then cook onion in the drippings (add butter if needed) on medium-low for 12 to 15 minutes until caramelized.
  3. Whisk eggs, cream, milk, salt, pepper, and nutmeg until smooth and slightly frothy.
  4. Scatter bacon, onion, and cheddar in the warm crust, then pour custard over the top.
  5. Bake on the center rack 35 to 40 minutes until puffed and golden with a slight wobble in the center, internal temp 170 °F. Cover edges with foil if they brown too fast.
  6. Cool 10 minutes, slice into wedges, and serve warm.

Notes

The resting time is not counted in the cook time above; the quiche needs those 10 minutes to hold clean slices. For a deeper flavor, caramelize the onions a day ahead and keep them covered in the fridge.
