- Heat oven to 375 °F. Roll crust into a 9-inch pie dish, prick, line with parchment and weights, and blind-bake 15 minutes. Remove weights and bake 5 minutes more.
- Cook bacon in a skillet over medium heat until crisp, remove, then cook onion in the drippings (add butter if needed) on medium-low for 12 to 15 minutes until caramelized.
- Whisk eggs, cream, milk, salt, pepper, and nutmeg until smooth and slightly frothy.
- Scatter bacon, onion, and cheddar in the warm crust, then pour custard over the top.
- Bake on the center rack 35 to 40 minutes until puffed and golden with a slight wobble in the center, internal temp 170 °F. Cover edges with foil if they brown too fast.
- Cool 10 minutes, slice into wedges, and serve warm.
Notes
The resting time is not counted in the cook time above; the quiche needs those 10 minutes to hold clean slices. For a deeper flavor, caramelize the onions a day ahead and keep them covered in the fridge.
