Ingredients
  

  • 2 1/2 cups all-purpose flour
  • 1 tbsp cornstarch
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • Colored sanding sugar or royal icing, for decorating

Method
 

  1. Beat butter and sugar on medium speed until pale and fluffy, about 3 minutes.
  2. Add egg and vanilla, then mix on low until smooth.
  3. Whisk flour, cornstarch, baking powder, and salt together. Add to the wet mixture and mix on low just until a soft dough forms.
  4. Divide dough in half, shape into discs, wrap, and refrigerate at least 1 hour.
  5. Roll dough 1/4 inch thick on a floured surface. Cut with flower cutters and place on parchment-lined baking sheets.
  6. Bake at 350°F for 8 to 10 minutes, until edges are just set. Cool completely, then decorate with sanding sugar or royal icing.

Notes

Chill the dough for at least 1 hour before rolling; this is hands-off time not included in the prep. For the cleanest flowers, pop the cut-out cookies on the baking sheet in the fridge for 10 minutes before they go into the oven. The recipe yields about 2 dozen 3-inch cookies.
