Ingredients
  

  • 2 cups (180 g) rolled oats
  • 3 very ripe bananas, about 1 1/4 cups mashed
  • 2 large eggs
  • 1/4 cup (60 ml) pure maple syrup
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • Pinch of salt

Method
 

  1. Blend the rolled oats in a blender or food processor until a fine flour forms, about 30 seconds.
  2. In a large bowl, mash the bananas, then whisk in the eggs, maple syrup, vanilla, and salt until smooth.
  3. Stir the oat flour, baking soda, and cinnamon into the wet mixture until just combined.
  4. Pour the batter into a greased 8x4-inch loaf pan and smooth the top. Bake at 350°F (175°C) for 40 to 45 minutes, until a toothpick comes out with a few moist crumbs.
  5. Cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely before slicing.

Notes

The loaf slices cleanest when completely cool; warm bread can crumble. If you do not have a blender, you can use store-bought oat flour, but the texture will be slightly more dense. Letting the batter sit for 5 minutes after mixing can help the oats absorb moisture and reduce any dry patches.
