- Blend the rolled oats in a blender or food processor until a fine flour forms, about 30 seconds.
- In a large bowl, mash the bananas, then whisk in the eggs, maple syrup, vanilla, and salt until smooth.
- Stir the oat flour, baking soda, and cinnamon into the wet mixture until just combined.
- Pour the batter into a greased 8x4-inch loaf pan and smooth the top. Bake at 350°F (175°C) for 40 to 45 minutes, until a toothpick comes out with a few moist crumbs.
- Cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely before slicing.
Notes
The loaf slices cleanest when completely cool; warm bread can crumble. If you do not have a blender, you can use store-bought oat flour, but the texture will be slightly more dense. Letting the batter sit for 5 minutes after mixing can help the oats absorb moisture and reduce any dry patches.
