- Preheat oven to 425°F. Whisk flour, baking powder, baking soda, and salt. Cut cold butter into flour mixture until it looks like coarse crumbs with pea-sized pieces. Stir in buttermilk until a dough forms.
- Pat dough to 1 inch thick, fold, then pat out again. Cut 4 biscuits, brush with buttermilk, and bake 14-16 minutes until golden.
- Cook sausage patties in a skillet over medium heat, 4-5 minutes per side, until browned and cooked through. Drain on paper towels.
- Whisk eggs with milk, salt, and pepper. Scramble in the same skillet over medium-low heat, stirring gently, about 2 minutes, until just set and glossy.
- Split biscuits, layer with cheese, sausage, and eggs, then close and serve immediately.
Notes
The butter and buttermilk must be cold to get flaky layers. If the kitchen is warm, freeze the butter cubes for 10 minutes before you start. For bacon, cook 8 strips crisp and drain before assembling.
