Feta Stuffed Chicken Breast Recipe

Ingredients
  

  • 4 boneless, skinless chicken breasts (6 to 8 oz each)
  • 4 oz block feta cheese
  • 1/4 cup oil-packed sun-dried tomatoes, drained and chopped
  • 1 cup fresh baby spinach, roughly chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1/2 tsp salt, divided
  • 1/4 tsp black pepper
  • Pinch of red pepper flakes (optional)

Method
 

  1. Preheat oven to 400°F (200°C). Mix feta, sun-dried tomatoes, spinach, garlic, 1 tbsp olive oil, lemon juice, 1/4 tsp salt, and red pepper flakes in a bowl.
  2. Cut a horizontal pocket in each chicken breast. Season inside and out with remaining salt and pepper. Stuff with filling and secure with toothpicks.
  3. Heat remaining 1 tbsp olive oil in an oven-safe skillet over medium-high. Sear chicken 3 to 4 minutes per side until golden.
  4. Transfer skillet to oven and bake 15 to 18 minutes, until internal temp reaches 165°F (74°C).
  5. Rest chicken 5 minutes, then slice and serve with pan juices.

Notes

If you don’t have an oven-safe skillet, move the seared chicken to a baking dish before putting it in the oven. The chicken is done when the juices run clear and a thermometer reads 165°F. Letting it rest for a few minutes keeps the filling from spilling out when you slice.
