Ingredients
Method
- Cream butter and sugar with an electric mixer on medium until light and fluffy, about 3 minutes.
- Beat in egg and vanilla until smooth and glossy.
- Whisk flour, cinnamon, nutmeg, baking powder, and salt together. Gradually mix into butter mixture on low just until combined. Add milk a tablespoon at a time if dough is too dry.
- Shape dough into a disc, wrap in plastic, and chill at least 30 minutes.
- Preheat oven to 350°F. Roll dough to 1/4 inch thick, cut with fall cookie cutters, and place on parchment-lined sheets. Bake 10-12 minutes until bottoms are golden. Cool on rack.
- Once completely cool, decorate with royal icing and let set until hard.
Notes
Chill time is additional and not counted in prep or cook. Baking time is per sheet; you may need to bake multiple batches. For the cleanest shapes, chill cut cookies on the sheet for 10 minutes before baking.
