Fall Sugar Cookies Recipe

Ingredients
  

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon fine salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg, room temperature
  • 1 1/2 teaspoons vanilla extract
  • 1 to 2 tablespoons milk, if needed

Method
 

  1. Cream butter and sugar with an electric mixer on medium until light and fluffy, about 3 minutes.
  2. Beat in egg and vanilla until smooth and glossy.
  3. Whisk flour, cinnamon, nutmeg, baking powder, and salt together. Gradually mix into butter mixture on low just until combined. Add milk a tablespoon at a time if dough is too dry.
  4. Shape dough into a disc, wrap in plastic, and chill at least 30 minutes.
  5. Preheat oven to 350°F. Roll dough to 1/4 inch thick, cut with fall cookie cutters, and place on parchment-lined sheets. Bake 10-12 minutes until bottoms are golden. Cool on rack.
  6. Once completely cool, decorate with royal icing and let set until hard.

Notes

Chill time is additional and not counted in prep or cook. Baking time is per sheet; you may need to bake multiple batches. For the cleanest shapes, chill cut cookies on the sheet for 10 minutes before baking.
