Ingredients
  

  • 3 to 4 lbs beef back ribs
  • 2 tbsp brown sugar
  • 1 tbsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/4 tsp cayenne pepper
  • 1 cup beef broth
  • 1/4 cup apple cider vinegar
  • 2 tbsp Worcestershire sauce
  • 1/2 cup ketchup
  • 1 medium onion, sliced into half moons
  • 4 cloves garlic, smashed

Method
 

  1. Mix brown sugar, smoked paprika, garlic powder, onion powder, salt, pepper, and cayenne. Pat ribs dry and rub the mixture all over. Let rest at room temperature.
  2. Heat oil in a large heavy skillet over medium-high heat. Sear ribs in batches for 2 to 3 minutes per side until deeply browned.
  3. Whisk broth, vinegar, Worcestershire, and ketchup in the crockpot. Add onion and garlic, then nestle in the seared ribs. Cover and cook on low for 6 to 7 hours or high for 3 to 4 hours.
  4. Transfer ribs to a foil-lined baking sheet. Strain the cooking liquid into a saucepan, simmer 5 minutes to thicken, then brush over the ribs. Broil for 2 to 3 minutes until bubbly and charred in spots. Serve with the remaining sauce.

Notes

If you prefer to skip the broiling step, the ribs are still delicious straight from the crockpot — just spoon the sauce over them. The sauce will be thinner that way, so serve it in a bowl on the side.
