- Mix brown sugar, smoked paprika, garlic powder, onion powder, salt, pepper, and cayenne. Pat ribs dry and rub the mixture all over. Let rest at room temperature.
- Heat oil in a large heavy skillet over medium-high heat. Sear ribs in batches for 2 to 3 minutes per side until deeply browned.
- Whisk broth, vinegar, Worcestershire, and ketchup in the crockpot. Add onion and garlic, then nestle in the seared ribs. Cover and cook on low for 6 to 7 hours or high for 3 to 4 hours.
- Transfer ribs to a foil-lined baking sheet. Strain the cooking liquid into a saucepan, simmer 5 minutes to thicken, then brush over the ribs. Broil for 2 to 3 minutes until bubbly and charred in spots. Serve with the remaining sauce.
Notes
If you prefer to skip the broiling step, the ribs are still delicious straight from the crockpot — just spoon the sauce over them. The sauce will be thinner that way, so serve it in a bowl on the side.
