Ingredients

  • 4 boneless skinless chicken breasts
  • 1 cup buttermilk
  • 2 tbsp hot sauce
  • 1 tsp kosher salt
  • 1 1/2 cups all-purpose flour
  • 1/2 cup cornstarch
  • 2 tsp smoked paprika
  • 1 1/2 tsp cayenne pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp freshly ground black pepper
  • Vegetable or canola oil, for frying
  • 4 brioche buns
  • 2 tbsp unsalted butter
  • 1/2 cup mayonnaise
  • 2 tbsp sriracha
  • 1 tsp honey
  • Dill pickle chips, for serving
  • Green leaf lettuce, for serving

Method

  1. Whisk buttermilk, hot sauce, and salt. Add chicken, coat, and refrigerate at least 30 minutes.
  2. In a shallow dish, combine flour, cornstarch, paprika, cayenne, garlic powder, onion powder, and pepper. Dredge each chicken breast, pressing to coat heavily.
  3. Heat oil to 350°F. Fry chicken in batches for 4-5 minutes per side, until golden and 165°F inside. Drain on a wire rack and season with salt.
  4. Toast buns in butter. Mix mayo, sriracha, and honey. Spread on buns, add chicken, pickles, and lettuce. Serve hot.

Notes

The 30-minute brine is a minimum, not included in prep time. For the most tender chicken, let it sit in the buttermilk up to 4 hours. Keep fried chicken warm in a 200°F oven on a wire rack if frying in batches.
