- Whisk buttermilk, hot sauce, and salt. Add chicken, coat, and refrigerate at least 30 minutes.
- In a shallow dish, combine flour, cornstarch, paprika, cayenne, garlic powder, onion powder, and pepper. Dredge each chicken breast, pressing to coat heavily.
- Heat oil to 350°F. Fry chicken in batches for 4-5 minutes per side, until golden and 165°F inside. Drain on a wire rack and season with salt.
- Toast buns in butter. Mix mayo, sriracha, and honey. Spread on buns, add chicken, pickles, and lettuce. Serve hot.
Notes
The 30-minute brine is a minimum, not included in prep time. For the most tender chicken, let it sit in the buttermilk up to 4 hours. Keep fried chicken warm in a 200°F oven on a wire rack if frying in batches.
