Extra Crispy Potato Pancakes Recipe

Ingredients
  

  • 2 large russet potatoes (about 1 lb), peeled
  • 1 small yellow onion, peeled
  • 2 large eggs
  • 3 tbsp all-purpose flour
  • 1 tsp salt
  • ¼ tsp black pepper
  • Vegetable oil for frying (about ¼ cup)

Method
 

  1. Grate the potatoes and onion on the large holes of a box grater into a clean kitchen towel.
  2. Twist the towel tightly and squeeze out as much liquid as you can, about 1 full minute, until the shreds feel dry.
  3. Transfer the mixture to a bowl and stir in the eggs, flour, salt, and pepper until just combined, about 30 seconds.
  4. Heat ¼ inch of oil in a large skillet over medium-high heat. Scoop ¼ cup portions of batter into the pan and flatten slightly. Fry for 3 to 4 minutes per side until deep golden.
  5. Drain on paper towels, then serve right away with sour cream and applesauce.

Notes

The pancakes crisp best when you serve them immediately. If you are making a large batch, hold the first rounds in a 200°F (95°C) oven on a rack while you finish frying.
