- Melt 2 tbsp butter in a large pot over medium heat. Cook the onion for 4 to 5 minutes until soft, add garlic and cook 30 seconds. Stir in flour for 1 minute, then whisk in warm milk until thickened, about 3 to 4 minutes.
- Remove from heat and stir in cheddar until melted. Season with salt, pepper, and cayenne. Pour into a large bowl and mix in sour cream. Fold in the hashbrowns until evenly coated.
- Butter a 9x13-inch dish and spread the mixture in an even layer.
- Toss the crushed cornflakes with 2 tbsp melted butter and scatter over the top.
- Bake at 350°F (175°C) for 45 to 50 minutes until bubbling and the topping is deep golden.
- Let the casserole rest 5 to 10 minutes, then scoop and serve warm.
Notes
Thaw the hashbrowns in the fridge overnight or on the counter for about 30 minutes before you start. If the casserole has been refrigerated before baking, let it sit at room temperature while the oven preheats so it cooks evenly.
