Method
- Heat-treat the flour in the microwave until it reaches 165°F, then spread it on a plate to cool completely.
- Beat the butter, both sugars, and salt until light and fluffy, about 2 minutes, then mix in the vanilla.
- Add the cooled flour and 2 tablespoons of milk, mixing until a soft dough forms. Add the last tablespoon of milk only if the dough is crumbly.
- Fold in the chocolate chips and serve immediately, or chill for a firmer texture.
Notes
Chill the dough for 15 minutes if you like a scoopable, traditional cookie dough texture. This recipe is safe to eat raw because the flour is heat-treated and it contains no eggs.
