Eggless Banana Cake Recipe

Ingredients
  

  • 2 cups (250 g) all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ tsp ground cinnamon
  • 3 large overripe bananas (about 1½ cups mashed)
  • ⅔ cup (135 g) granulated sugar
  • ½ cup (120 ml) neutral oil
  • ¼ cup (60 ml) milk
  • 2 tsp vanilla extract
  • 1 tbsp white vinegar or apple cider vinegar

Method
 

  1. Preheat the oven to 350°F (175°C) and grease a 9x5-inch loaf pan. Mash the bananas in a large bowl, then stir in the sugar, oil, milk, vanilla, and vinegar.
  2. In a separate bowl, whisk the flour, baking soda, salt, and cinnamon.
  3. Pour the wet ingredients into the dry and fold together just until no flour streaks remain.
  4. Scrape the batter into the pan and bake 50 to 60 minutes, until a toothpick comes out with a few moist crumbs. Cool in the pan 10 minutes, then transfer to a rack.
  5. Slice and serve once fully cool.

Notes

This cake tastes even better the next day. Store tightly wrapped at room temperature for up to 2 days, or refrigerate for up to 5 days.
