Egg White Frittata Recipe

Ingredients
  

  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 3 cups fresh baby spinach
  • 1 cup liquid egg whites (or 8 large egg whites)
  • 2 tbsp milk
  • ΒΌ cup crumbled feta cheese
  • Salt and black pepper
  • Pinch of red pepper flakes (optional)

Method
 

  1. Preheat broiler to high. Heat oil in a 10-inch ovenproof skillet over medium heat. Cook onion 3 minutes, add garlic, cook 30 seconds. Add spinach in handfuls, cooking until wilted, about 2 minutes. Season with salt and pepper.
  2. Whisk egg whites, milk, and a pinch of salt and pepper until frothy. Pour over spinach, tilting pan to distribute. Cook undisturbed 3 to 4 minutes until edges are set and center still jiggles.
  3. Sprinkle feta over the top. Transfer skillet to broiler and broil 2 to 3 minutes, watching closely, until puffed and golden brown in spots.
  4. Let rest 1 minute, then slice into wedges and serve warm.

Notes

The frittata will deflate slightly as it cools, so slice and serve it soon after it comes out of the broiler if you want the full height. A flexible fish turner makes it easy to lift the first wedge out of the pan without breaking it.
