Ingredients
  

  • 2 cups liquid egg whites
  • 1/4 cup low-fat cottage cheese
  • 1/2 cup finely chopped fresh spinach
  • 1/4 cup diced red bell pepper
  • 1/4 cup diced yellow onion
  • 1/2 cup shredded part-skim mozzarella cheese
  • 1 tsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder

Method
 

  1. Whisk the egg whites, cottage cheese, salt, pepper, and garlic powder until frothy, about 1 minute.
  2. Heat the olive oil in a skillet over medium heat. Add the onion and bell pepper, cooking until softened, about 3 minutes. Stir in the spinach for 1 minute until wilted, then let cool.
  3. Preheat the oven to 350°F (180°C) and coat a 12-cup muffin tin with cooking spray. Whisk the egg mixture again, then divide the veggies and cheese among the cups. Pour the egg mixture in, filling each about three-quarters full.
  4. Bake for 15–18 minutes until puffed and set. Cool in the tin for 5 minutes, then loosen with a knife and lift out. Serve hot.

Notes

These bites are best served warm. If you’re meal prepping, let them cool completely before storing; a quick 30-second microwave brings them right back. For even fluffier bites, add the cottage cheese—it makes a real difference.
