- Combine the soy sauce, mirin, sugar, and sake in a small saucepan. Set over medium heat and stir until the sugar dissolves, then bring to a gentle simmer.
- Reduce the heat to medium-low and simmer for about 15 minutes, stirring occasionally, until the sauce coats the back of a spoon. It will continue to thicken as it cools.
- Pour the sauce into a clean jar, let it cool to room temperature, then seal and refrigerate.
Notes
The sauce will seem thin right after cooking but thickens into a glossy glaze once it cools. If you want a heavier pour, simmer it an extra 2 to 3 minutes. A light-colored saucepan makes it easier to see the color change.
