Ingredients
  

  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 1/2 cup all-purpose flour, heat-treated
  • 1/3 cup Dutch-process cocoa powder
  • 1/4 tsp fine sea salt
  • 2 tbsp whole milk, plus more if needed
  • 1 tsp vanilla extract
  • 1/2 cup mini chocolate chips

Method
 

  1. Heat-treat the flour in the microwave until 160°F, cool 2 minutes, then whisk with cocoa and salt.
  2. Beat melted butter, granulated sugar, and brown sugar until glossy and smooth.
  3. Stir the butter mixture into the dry ingredients with vanilla and milk until a thick batter forms.
  4. Fold in the chocolate chips, scoop into a bowl, and serve.

Notes

If you prefer a softer, more mousse-like batter, add an extra tablespoon of milk after mixing. For an even deeper chocolate flavor, let the batter chill for an hour before serving. The batter can be made a day ahead and kept refrigerated; let it warm up a bit before eating.
