Easy Vegan Sushi Rolls Recipe

Ingredients
  

  • 1 cup sushi rice
  • 1 ¼ cups water
  • 2 tbsp rice vinegar
  • 1 tbsp sugar
  • ½ tsp salt
  • 4 nori sheets
  • 1 ripe avocado
  • ½ small cucumber
  • 1 medium carrot
  • Soy sauce or tamari, for dipping
  • Pickled ginger and wasabi (optional)

Method
 

  1. Rinse rice, add water and a pinch of salt, bring to a boil, cover, and simmer on low for 20 minutes.
  2. Stir vinegar, sugar, and salt until dissolved, then fold into hot rice. Fan gently until just warm, about 10 minutes.
  3. Slice avocado, cucumber, and carrot into thin strips or matchsticks.
  4. Lay nori shiny-side down on a bamboo mat, spread a thin layer of rice leaving a 1-inch border, arrange fillings across the lower third, and roll tightly using the mat.
  5. Seal the edge with a dab of water, then slice with a wet knife and serve right away.

Notes

The rice cools while you prep the vegetables, so the timing works out. If your kitchen is warm, fan the rice a little more aggressively to speed it up. These rolls are at their best within a few minutes of slicing, so aim to serve them as soon as the knife is down.
