Easy One-Pan Cheesy Ground Beef and Zucchini Skillet Recipe

Ingredients
  

  • 1 tbsp olive oil
  • 1 lb lean ground beef
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 medium zucchini, diced (about 3 cups)
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded sharp cheddar cheese
  • Fresh parsley for garnish (optional)

Method
 

  1. Heat oil in a large skillet over medium-high heat. Brown the ground beef, breaking it up, for 5 to 7 minutes until no pink remains.
  2. Stir in onion and garlic; cook 2 minutes. Add zucchini and cook 3 to 4 minutes until just starting to soften.
  3. Add tomatoes with juices, Italian seasoning, salt, and pepper. Simmer, stirring occasionally, for 5 minutes until the mixture thickens slightly.
  4. Reduce heat to low, sprinkle cheese over the top, and cover. Cook 2 to 3 minutes until cheese is melted and bubbly. Garnish with parsley and serve.

Notes

If you have time, let the cheese rest off the heat for a minute after melting so it sets up slightly and is easier to scoop. The dish is best served right away, but leftovers reheat well with a touch of water.
