- Preheat oven to 375°F and grease a 12-cup muffin tin. Sauté bell pepper and onion in olive oil over medium heat until soft, about 4 minutes. Add spinach and cook until wilted, 1 minute. Remove from heat and cool slightly.
- Whisk eggs, milk, salt, and pepper in a large bowl until blended. Stir in the cooked vegetables and feta.
- Divide mixture evenly among muffin cups, filling each about three-quarters full. Bake until puffed and set, 18 to 22 minutes.
- Cool in pan 5 minutes, then loosen edges with a knife and remove. Serve warm.
Notes
If you don't have feta, use shredded cheddar or crumbled goat cheese. Pressed for time? Skip the sauté and use jarred roasted red peppers (drained and chopped) and thawed frozen spinach (squeezed dry).
