Method
- Beat butter and sugar until fluffy, about 2 minutes. Add egg and vanilla, then mix in dry ingredients until a soft dough forms.
- Shape the dough into a disk, wrap, and chill for at least 1 hour.
- Roll dough to ¼-inch thickness, then cut large and small circles. Assemble cookies on lined sheets, pressing ears lightly onto heads.
- Bake at 350°F for 8-10 minutes, until edges are just golden. Cool on the sheet 5 minutes, then transfer to a rack.
- Cool completely, then serve as is or decorate with glaze and sprinkles.
Notes
Chilling time is not included in prep or cook time. For the best shape, bake one sheet at a time and keep remaining cutouts in the refrigerator. If using a Mickey Mouse cutter, simply cut and place on the sheet.
