Method
- Whisk together honey, both mustards, garlic, ½ tsp salt, and pepper. Set glaze aside and preheat oven to 400°F (200°C).
- Pat salmon dry, season with salt and pepper, and arrange skin side down on an oiled baking sheet. Spread half the glaze over the tops.
- Bake for 12 minutes, until the edges are opaque and the glaze is bubbling.
- Switch to broil and cook 2 to 3 minutes longer, until the glaze blisters and turns mahogany. Serve with lemon wedges and pan juices.
Notes
If your fillets vary in thickness, pull the thinner ones a minute early and let them rest while the thicker pieces finish under the broiler. Leftover glaze can be reserved and brushed on during the last minute of broiling for an extra sticky finish.
