Easy Fried Rice Recipe

Ingredients
  

  • 4 cups cold cooked rice
  • 3 tbsp neutral oil, divided
  • 3 large eggs, beaten
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp grated ginger
  • 1 cup frozen peas and carrots
  • 3 tbsp soy sauce
  • 1 tsp sesame oil
  • 2 green onions, sliced thin
  • Salt and white pepper, to taste

Method
 

  1. Heat 1 tbsp oil in a large skillet over high heat. Scramble the eggs into soft curds, about 30 seconds. Transfer to a plate.
  2. Add another 1 tbsp oil and sauté the onion until translucent, 2 minutes. Stir in garlic and ginger for 30 seconds, then add peas and carrots and cook 1 minute.
  3. Push vegetables to the side, add the last 1 tbsp oil, and spread the cold rice in an even layer. Let it sit 2 minutes until golden, then flip and brown the other side 2 minutes.
  4. Pour the soy sauce and sesame oil over the rice, add the eggs back in, and toss everything together. Season with salt and white pepper.
  5. Stir in the green onions and serve immediately.

Notes

Day-old rice gives the best texture, but you can chill freshly cooked rice on a baking sheet until it dries. Work fast once the pan is hot and keep the ingredients moving only when you need to.
