- Heat 1 tbsp oil in a large skillet over high heat. Scramble the eggs into soft curds, about 30 seconds. Transfer to a plate.
- Add another 1 tbsp oil and sauté the onion until translucent, 2 minutes. Stir in garlic and ginger for 30 seconds, then add peas and carrots and cook 1 minute.
- Push vegetables to the side, add the last 1 tbsp oil, and spread the cold rice in an even layer. Let it sit 2 minutes until golden, then flip and brown the other side 2 minutes.
- Pour the soy sauce and sesame oil over the rice, add the eggs back in, and toss everything together. Season with salt and white pepper.
- Stir in the green onions and serve immediately.
Notes
Day-old rice gives the best texture, but you can chill freshly cooked rice on a baking sheet until it dries. Work fast once the pan is hot and keep the ingredients moving only when you need to.
