Ingredients

  • 2 lb ground beef (80/20)
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 2 tbsp taco seasoning
  • 8 oz tomato sauce
  • ½ cup water
  • Kosher salt, to taste
  • Freshly ground black pepper

Method

  1. Brown the ground beef in a hot skillet over medium-high heat, breaking it up, until no pink remains, about 7 to 8 minutes. Drain most of the fat.
  2. Cook the diced onion in the same skillet until softened, 3 to 4 minutes, then add the garlic and cook 1 minute more.
  3. Transfer the beef and onion mixture to a slow cooker. Stir in the taco seasoning, tomato sauce, and water until combined.
  4. Cover and cook on low for 4 to 6 hours or on high for 2 to 3 hours, stirring once halfway through.
  5. Break up any large clumps of meat with a spoon, taste for salt, and spoon into warm tortillas with your favorite toppings.

Notes

For the juiciest texture, bring the meat to the table straight from the slow cooker; it will stay warm for a while on the “keep warm” setting. If you prefer a drier, more crumbly filling for crispy taco shells, crack the lid slightly during the last 30 minutes of cooking to let some steam escape.
