Easy Crockpot Stuffed Pepper Soup Recipe

Ingredients
  

  • 1 lb ground beef
  • 1 medium yellow onion, diced
  • 3 medium bell peppers, diced
  • 3 cloves garlic, minced
  • 1 (15 oz) can tomato sauce
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 4 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 2 tsp Italian seasoning
  • ½ tsp salt
  • ¼ tsp ground black pepper
  • 1 cup uncooked long-grain white rice
  • Shredded cheddar or mozzarella cheese, for serving

Method
 

  1. Brown the ground beef and onion in a skillet over medium-high heat for about 6 minutes. Add garlic and cook 1 minute. Drain fat.
  2. Transfer beef mixture to a 6-quart slow cooker. Add tomato sauce, diced tomatoes, broth, Worcestershire, Italian seasoning, salt, pepper, and bell peppers. Stir.
  3. Cover and cook on low for 4 hours or high for 2 hours, until peppers are tender.
  4. Turn slow cooker to high. Stir in rice, cover, and cook for 20 to 25 minutes until rice is tender.
  5. Ladle into bowls and top with shredded cheese.

Notes

The rice continues to absorb liquid after cooking, so the soup thickens in the bowl. If you are making it ahead, consider storing the rice separately and adding it just before serving.
