- Scatter bell peppers and onion in the bottom of a 6-quart slow cooker. Add chicken broth and lime juice.
- Place chicken breasts on top. Sprinkle fajita seasoning over the chicken and turn to coat both sides.
- Cover and cook on high for 3 to 4 hours, or low for 6 to 7 hours, until chicken reaches 165°F and shreds easily.
- Transfer chicken to a cutting board and shred with two forks. Return to the slow cooker, toss with peppers and juices, and let sit on warm 5 minutes. Serve in warm tortillas with desired toppings.
Notes
For a low setting, cook 6 to 7 hours. Let the shredded chicken sit in the juices on warm for 5 minutes to absorb flavor. Leftovers taste even better the next day.
