Easy Crockpot Chicken Fajitas Recipe

Ingredients
  

  • 2 lbs boneless skinless chicken breasts
  • 3 bell peppers, any color, sliced into ½-inch strips
  • 1 large onion, sliced into ½-inch strips
  • 2 tbsp fajita seasoning
  • 1 lime, juiced
  • ¼ cup low-sodium chicken broth

Method
 

  1. Scatter bell peppers and onion in the bottom of a 6-quart slow cooker. Add chicken broth and lime juice.
  2. Place chicken breasts on top. Sprinkle fajita seasoning over the chicken and turn to coat both sides.
  3. Cover and cook on high for 3 to 4 hours, or low for 6 to 7 hours, until chicken reaches 165°F and shreds easily.
  4. Transfer chicken to a cutting board and shred with two forks. Return to the slow cooker, toss with peppers and juices, and let sit on warm 5 minutes. Serve in warm tortillas with desired toppings.

Notes

For a low setting, cook 6 to 7 hours. Let the shredded chicken sit in the juices on warm for 5 minutes to absorb flavor. Leftovers taste even better the next day.
