Easy Crockpot Chicken and Broccoli Recipe

Ingredients
  

  • 1.5 lb boneless skinless chicken breasts
  • 3 cups broccoli florets
  • 1/2 cup low-sodium soy sauce
  • 3 tbsp honey
  • 3 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • 1 tbsp toasted sesame oil
  • 2 tbsp cornstarch mixed with 2 tbsp cold water
  • Sliced green onions and sesame seeds, for serving (optional)

Method
 

  1. Whisk the soy sauce, honey, garlic, ginger, and sesame oil in a bowl until combined.
  2. Place chicken in the slow cooker, pour the sauce over, cover, and cook on HIGH for 1.5 to 2 hours.
  3. Remove chicken, shred it, and return the pieces to the pot.
  4. Stir the cornstarch slurry and broccoli into the slow cooker, cover, and cook on HIGH for 25 to 30 minutes until the sauce thickens and broccoli is crisp-tender.
  5. Serve over rice, topped with green onions and sesame seeds if using.

Notes

If you prefer the low setting, cook the chicken on LOW for 3 to 4 hours, then continue with the broccoli step on HIGH as written. The rice is not included in the nutrition numbers; add about 200 calories per cup of steamed white rice if you serve it that way.
