- Mix the panko, Parmesan, garlic powder, Italian seasoning, melted butter, salt, and pepper. Stir in just enough broth until the mixture clumps when squeezed.
- Butterfly each chicken breast, then pound to an even ½-inch thickness between two sheets of plastic wrap. Season lightly with salt and pepper.
- Spread a quarter of the stuffing onto each breast, leaving a 1-inch border, then roll up tightly and secure with toothpicks.
- Preheat the oven to 375°F (190°C). Heat the olive oil in an oven-safe skillet over medium-high heat. Sear the chicken rolls seam-side down until golden on all sides, about 8 minutes total. Transfer the skillet to the oven and bake 18 to 22 minutes until the thickest part reaches 160°F.
- Remove from the oven, tent with foil, and rest for 5 minutes. Remove toothpicks, slice into rounds, and spoon any juices over the top.
Notes
If the stuffing mixture feels dry, add another teaspoon of liquid. The breadcrumbs will absorb moisture from the chicken as it bakes, so a slightly damp starting texture is better than a crumbly one. For extra flavor, stir a minced clove of fresh garlic into the stuffing along with the dry seasonings.
