Ingredients
  

  • 1 lb ground beef
  • 1 small yellow onion, finely diced
  • 3 garlic cloves, minced
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp onion powder
  • 1/2 tsp smoked paprika
  • 3 tbsp unsalted butter
  • 3 tbsp all-purpose flour
  • 2 cups whole milk
  • 1/2 cup sour cream
  • 1 (30 oz) package frozen shredded hashbrowns, thawed
  • 2 cups shredded sharp cheddar cheese

Method
 

  1. Preheat oven to 375°F. Brown ground beef in a skillet over medium-high heat, breaking it up, for 6-8 minutes. Add onion and cook 3-4 minutes. Stir in garlic, 1/2 tsp salt, 1/4 tsp pepper, onion powder, and paprika; cook 1 minute. Drain excess fat.
  2. Melt butter in a saucepan over medium heat. Whisk in flour and cook 1 minute. Gradually whisk in milk until smooth. Simmer 3-4 minutes until thick. Remove from heat, stir in sour cream, remaining salt and pepper, and 1 1/2 cups cheese until smooth.
  3. In a large bowl, combine hashbrowns and beef mixture. Pour sauce over and fold to coat evenly.
  4. Transfer to a greased 9x13-inch dish, top with remaining 1/2 cup cheese. Bake 35-40 minutes until golden and bubbly. Let rest 5 minutes.
  5. Spoon onto plates and garnish with chives. Serve hot.

Notes

Let the casserole sit for 5 minutes after baking so it cuts cleanly. You can assemble it through step 3 up to 24 hours ahead, cover, and refrigerate. When baking straight from the fridge, add about 10 minutes to the bake time.
