Easy Brownie Pie Recipe

Ingredients
  

  • 1 unbaked 9-inch pie crust
  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup semi-sweet chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C). Whisk cocoa powder, flour, and salt in a medium bowl.
  2. In a large bowl, whisk melted butter and sugar until smooth, about 1 minute. Add eggs and vanilla and whisk vigorously until thick and pale, about 1 minute more.
  3. Fold dry ingredients into wet mixture just until no flour streaks remain. Fold in chocolate chips, then pour batter into the chilled pie crust and smooth the top.
  4. Bake on the middle rack for 25 to 28 minutes, until edges are set but the center still jiggles slightly. Cool on a wire rack at least 30 minutes.
  5. Slice into wedges with a sharp knife and serve warm.

Notes

Cooling time is at least 30 minutes before slicing; the pie will continue to set as it cools. For the cleanest cuts, run the knife under hot water and wipe between slices.
