Easy Blueberry Cobbler Recipe

Ingredients
  

  • 4 cups blueberries, fresh or frozen
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon fine sea salt
  • 6 tablespoons cold unsalted butter, cut into small cubes
  • 1/2 cup whole milk

Method
 

  1. Preheat oven to 375°F (190°C). Toss blueberries, 1/2 cup sugar, cornstarch, lemon juice, and vanilla in a bowl until the berries are coated. Scrape into a 9-inch baking dish.
  2. Whisk flour, 1/4 cup sugar, baking powder, and salt. Cut in cold butter until the largest pieces are pea-sized. Stir in milk just until no dry spots remain.
  3. Drop spoonfuls of dough over the berry mixture, leaving gaps. Sprinkle with an extra tablespoon of sugar.
  4. Bake for 40–45 minutes, until the fruit is bubbling around the edges and the biscuit topping is deep golden. Let cool 10 minutes before serving.
  5. Serve warm, with ice cream or whipped cream if you like.

Notes

If using frozen berries, the bake time may extend by 5–10 minutes. The filling will look quite loose when it first comes out of the oven; it thickens as it cools.
