- Preheat oven to 400°F and line a baking sheet. Toss the sweet potato, broccoli, and onion with 1 tablespoon olive oil and a pinch of salt and pepper. Spread on the pan. Pat the chicken thighs dry, rub with remaining 1 tablespoon oil, the paprika, garlic powder, salt, and pepper, then place skin side up among the vegetables.
- Roast for 30 minutes until the chicken skin browns and the sweet potatoes are fork-tender.
- Brush the chicken thighs with barbecue sauce and spoon pan juices over the vegetables. Roast 5 more minutes.
- Broil on high for 2 to 3 minutes until the sauce bubbles and the skin gets charred spots. Rest 5 minutes, then serve.
Notes
Bone-in thighs give you the juiciest result, but boneless thighs work too with a shorter cook time (check the timing table above). If your barbecue sauce is very thick, warm it slightly so it brushes on smoothly without tearing the skin.
